I am going to post our family recipe.  It has been in our family for generations.  It has a lot less ingredients than most recipes I have seen online, and wonder if it is due the fact that my great/grandparents could once only afford the essentials, or due to the the regional differences in Italy.  Although simple, we enjoy it every year on Easter.  Happy Easter!

2C cubed ham
1C grated cheese (we prefer picorini romano)
1C rigotta cheese
10 large eggs
pepper to taste
salt if needed (the ham and cheese are usually pretty salty, I only use a small pinch of kosher salt).

Use your favorite recipe for pie crust, roll out two crusts, one for bottom and one for top of pie.  Place one pie shell in bottom of pie plate and add ham filling.  Add top crust and crimp top and bottom edges together. Slice slits in top of pie shell to allow steam to release.  Bake at 425 for 10 min, and then at 350 until knife insterted in middle comes out clean (depending upon oven, could be 30-50 min (convection ovens, around 30).  Allow to cool slightly, slice and enjoy!
