Really Easy Ravioli
I love ravioli. It is such a versatel dish — so many different ways to prepare it — And who doesn’t like a good dish of ravioli every now and then. The thing that prevents most of us from preparing ravioli at home is that it is not the easiest thing to make a good pasta dough with the just the right texture and thickness without much hassle and mess. One trick I learned from an Italian restaurant I worked at in Santa Monica is to use Chinese Won-tons. You can buy them in the refrigerated section of most supermarkets. Chinese won-tons are nothing more than fresh pasta squares.
What you do is take out a won-ton, fill it with whatever you are in the mood for and seal it up like you would with normal ravaioli pasta dough using an egg wash to make a tight seal. Drop the ravioli in boiling water and in just a minute or two you will have wonderful ravioli that is light and delicious. I’m telling you, your family and friends will rave.
